Ingredients
- 3 bell peppers, tops and seeds removed, halved lengthwise
- 1 small head broccoli, cut into florets
- 2 cups shredded chicken
- 2 cups cooked white rice
- 1 1/2 cups shredded white cheddar, divided
- 2 cloves garlic, minced
- 1/2 tsp. dried oregano
- Kosher salt
- Freshly ground black pepper
Directions
- Step 1Preheat oven to 350° and grease a medium baking dish with cooking spray. Place halved peppers cut side up in baking dish.
- Step 2In a large bowl, stir together broccoli, chicken, rice, 1 cup cheddar, garlic, and oregano, and season with salt and pepper.
- Step 3Fill each pepper with chicken mixture, then top with remaining cheese. Fill the bottom of the baking dish with 1/4 cup water. Cover with foil and bake 20 minutes, then remove foil and bake 8 to 10 minutes more, until peppers are tender and cheese is melted and bubbly.
