Ingredients
For the cookie
- 1 1/2 cups
(3 sticks) butter, softened
- 1 cup
granulated sugar
- 1 cup
brown sugar
- 2
large eggs
- 2 tsp.
pure vanilla extract
- 4 cups
all-purpose flour
- 2 tsp.
baking powder
- 1 1/2 tsp.
baking soda
- 2 tsp.
kosher salt
- 4 cups
chocolate chips
For the buttercream
- 2 cups
(4 sticks) butter, softened
- 8 cups
powdered sugar
- 2 tsp.
pure vanilla extract
- 1/4 tsp.
kosher salt
- 1/2 cup
heavy cream
Red and blue food coloring
Directions
- Step 1Make cookie: Preheat oven to 350°F and line a large baking sheet with parchment paper. In a large bowl using a hand mixer or in the bowl of a stand mixer, beat together butter and sugars until light and fluffy. Add eggs and vanilla and beat until combined.
- Step 2In another large bowl, stir together flour, baking powder, baking soda, and salt. Add dry ingredients to wet ingredients and beat just until combined. Fold in chocolate chips.
- Step 3Place dough on baking sheet and form into a large circle, about 12 inches wide. Bake until almost set in the middle, 30 minutes (it will continue to set as it cools, so don’t overbake it!). Let cool completely.
- Step 4Meanwhile, make buttercream: In a large bowl using a hand mixer or in the bowl of a stand mixer, beat butter until smooth. Scrape down the sides with a spatula, add powdered sugar, and beat until smooth. Add vanilla, salt, and heavy cream and beat until well combined.
- Step 5Divide frosting into three medium bowls (you’ll need about half for the red; a quarter each for blue and white). Dye one bowl red, one bowl blue, and keep the third white.
- Step 6Pipe buttercream: Transfer white frosting to a piping bag fitted with a small open star tip. Using a star cookie cutter as a guide, pipe dots to form a star in the middle of the cookie cake.
- Step 7Transfer blue frosting to a piping bag fitted with a small open star tip. Pipe dots to form a circle around the star, filling in the triangles of the star as well.
- Step 8Transfer red frosting to a piping bag fitted with a medium open star tip. Pipe small dots to form 2 red frosting circles around the blue, then pipe 2 circles of white around the red. Finish with 3 circles of red around the white.
