Ingredients
Shrimp
- 1/2 lb. large shrimp
- 1 Tbsp. sesame oil
- 1 tsp. garlic
- 1 tsp. ginger
- 1 tsp. jalapeño
- 2 Tbsp. red pepper
- 2 Tbsp. green pepper
- 2 Tbsp. onion
- 1 Tbsp. fermented black beans
- 1 tsp. shaoxing wine (or sherry wine)
- 1 Tbsp. fresh scallion greens
Sauce
- 1 Tbsp. rice vinegar
- 2 tsp. oyster sauce
- 1 tsp. hoisin
- 1 tsp. dark soy sauce
- 3/4 tsp. palm sugar
- salt
- Pepper
- 1 1/2 tsp. cornstarch
- 1/4 cup chicken stock
Directions
- Step 1Combine sauce ingredients and set aside.
- Step 2Heat wok over high heat for 30 seconds
- Step 3Add sesame oil and coat the wok.
- Step 4When the oil starts to smoke, add the garlic, ginger, jalapeños, red and green peppers, onions, and black beans.
- Step 5Stir for 30 seconds and cook for 30 seconds.
- Step 6Add wine by drizzling around the edges of the wok; mix well.
- Step 7When the shrimp begin to curl and turn pink, make a well in the center of the mixture.
- Step 8Stir sauce and pour in the well.
- Step 9Mix to combine all ingredients, about 1 1/2 minutes, until sauce begins to thicken and simmers. Season with salt and pepper.
- Step 10Turn off heat, remove to a heated dish, sprinkle with sesame seeds and scallion greens and serve with steamed rice.
