This vegan banana bread is big on banana flavor, super moist, and just sweet enough. If you're looking to add some substance, coconut flakes, toasted chopped nuts, and dried cherries are some of our favorite mix-ins.

Ingredients
- 1 cup
mashed banana (from about 3 medium or 2 large ripe bananas)
- 3/4 cup
packed light brown sugar
- 1/4 cup
non-dairy milk at room temperature
- 3 Tbsp.
refined coconut oil
- 2 tsp.
pure vanilla extract
- 1 1/2 cups
all-purpose flour
- 1 tsp.
baking soda
- 1 tsp.
ground cinnamon
- 1/2 tsp.
kosher salt
Directions
- Step 1Preheat oven to 350° and line a 8"-x-4" loaf pan with parchment paper.
- Step 2In a large bowl, combine banana, sugar, milk, oil, and vanilla. Whisk until smooth.
- Step 3In a medium bowl, whisk to combine flour, baking soda, cinnamon, and salt. Fold dry ingredients into wet ingredients until just combined.
- Step 4Transfer batter to prepared loaf pan and bake until top is golden and a toothpick inserted into the center of the banana bread comes out clean, 40 to 42 minutes. Let cool 10 minutes, then remove from pan and let cool completely.
