Chef Donald Link tosses blanched geoduck clam with a light dressing of olive oil, lemon juice, sweet chili, and freshly torn mint.

Ingredients
- 1 geoduck clam
- 2 tsp. lemon juice
- 2 tsp. olive oil
- 1 Tbsp. finely minced sweet chili
- 1/4 tsp. salt
- 1 pinch Black pepper
- 6 mint leaves
Directions
- Step 1Clean geoduck by blanching in hot water for 10 seconds, and place in ice bath.
- Step 2Cut the arm of the clam out, and remove the outside skin. Reserve the portion from inside the shell for chowder. Slice the arm meat paper thin, and toss with the other ingredients. Serve with some lightly blanched and cut collard greens or kale, tossed with lemon juice and salt.
