Spring has sprung, and you know what that means—it’s officially brunch season! You could join the hordes of other people lining up to get into the hottest spot, overpaying for eggs, pancakes, and bottomless mimosas you can never quite drink enough of for it to feel worth the cost…OR you could ring in the end of winter with the perfect brunch spread, right at home. We’ve rounded up 40 recipes that make it easy, all with extra springy flair that do the best with all the great produce popping up right now.

We’re talking fresh herbs, like in our baked feta frittata or our frico egg smash tacos; fresh berries, like in our strawberry rhubarb breakfast cake or our lemon-blueberry Dutch baby; and fresh veggies, like in our asparagus quiche or our carrot cake pancakes. What better use of your farmer’s market haul, right?

We’re also aware that once the sun starts coming out, nobody wants to be stuck in the kitchen, so we’ve got lots of brunch casseroles here that make it easy to serve a crowd. Check out our breakfast strata, our blueberry French toast casserole, our crescent roll breakfast casserole, and our cheesy croissant casserole if you don’t want to feel like a short-order diner cook in your own home.

We’re also very here for all the spring holidays coming up, like Easter, Passover, and Cinco de Mayo, so we’ve included a few nods to those here too, like our huevos rancheros casserole, our ham & cheese brunch bake, our breakfast tacos, and our matzo granola. No matter what you’re celebrating, though, no brunch spread is complete without the perfect drinks, so check out our top brunch cocktails to make you the brunch host with the most.
