You know what's more surprising than the price of eggs these days? How many recipes require those same eggs. And I'm not just talking breakfast either! As it turns out, so many of my favorite recipes require at least one egg. So I've tasked myself with figuring out how to still have some of my usual weekly standbys (like meatballs, chicken parm, and yes, cookies) without having to shell out for a single (expensive) egg. Here's 20 clever recipes that'll help you save money (and stress) when the egg shortages have messed with your cooking routine.

Does this sound familiar? You're home from the store, have gotten all your ingredients lined up and ready to go for dinner, but one thing is missing: The eggs! A lot of Thai dishes are spicy, sweet, salty, and sour all at once, and that’s why Thai food is so easy to love.
