Gone are the days where you'd simply steam vegetables for dinner and...well, that was kind of it. Here at Delish we are so about giving vegetables their time in the spotlight (and not just for serving as merely the side dish) and that does not mean any steaming involved. These 30 easy vegetable recipes will have you grilling, frying, roasting, smashing, stuffing, and even spiralizing (!) into a masterpiece worthy of seconds. We've got all your favorite vegetables on the menu too – tomatoes, potatoes, cabbage, zucchini, Brussels sprouts, cauliflower – plus a garden variety of options for the staunchest vegetable haters out there.

Team Delish lives by a few maxims, but our main one about vegetables is to simply "Just Grill It." Very little beats a bit of char, plus these vegetable recipes always end up stealing the attention of the carnivores out there (especially our grilled cabbage steaks and cheesy zucchini steaks). In some cases, we've even found that grilled vegetables go with their protein-packed friends very well, as is the case of our grilled stuffed peppers and zucchini bun hot dogs (don't knock them 'til you try them!)

If you don't want to fuss with a grill, there's still so many other ways to zhuzh up how you cook vegetables. You can swap in sweet potatoes instead of Russets for our loaded Mediterranean sweet potato fries or use poblano peppers instead of bell peppers for these beef and rice stuffed poblano peppers. It goes without saying you can (and should) Caprese your asparagus and cacio e pepe your Brussels sprouts. And if you've got some frustration to get out (and need to sneak in a vegetable), we give you full permission to smash some potatoes.

Grilled cabbage is an excellent "blank canvas" to carry out any other flavors that you may have your heart set on, so feel free to customize as you see fit to find your true cabbage soulmate. Spoon it with honey mustard dressing, dollop it with garlicky romesco, or drizzle some prik nam pla for a spicy kick.

Beef & Rice Stuffed Poblano Peppers

Common in Mexican and Southwestern cuisine, stuffing poblano peppers is a beautiful way to enjoy this earthy and meaty pepper. Bell peppers tend to be a bit sweeter and fruitier than poblano peppers, but poblanos really hold up to big flavors and rich foods. So we updated the typical beef and rice stuffing a bit by using fire-roasted tomatoes and spicing the sauce with chipotle chiles, ground cumin, and oregano.

Loaded Mediterranean Sweet Potato Fries

Grilled Zucchini With Ricotta & Walnuts
