We know we said we wouldn't claim such extremes, but these pots de crème, puddings, and mousses really are among the best things that have ever happened — at least to our taste buds. There are, of course, other ways of dealing with life's problems. But if an occasional chocolate fix boosts your mood in a big way, then get ready to drool over these warm, gooey chocolate treats.

Chocolate-Ginger Pots de Crème

<p>Dig into toasted coconuts and melted dark chocolate adorned with crystallized ginger that will set perfectly on the dinner table, and even better in your stomach.</p>
<p>2 (14 ounces each) cans coconut milk<br />
8 egg yolks<br />
1/2 cup sugar<br />
3/4 cup dark chocolate<br />
2 tablespoons crystallized ginger, finely chopped</p>
<p>Heat oven to 300°F. Arrange eight (6-oz) ceramic or ovenproof ramekins in a baking dish with sides at least 2 inches high.</p>
<p>Heat coconut milk over medium heat until steaming. Be careful not to heat too quickly or the milk will scorch the bottom of the pan. Meanwhile, in a stainless steel bowl, whisk together egg yolks and sugar until smooth. Once coconut milk is steaming, remove from heat, add chocolate, and whisk until chocolate has melted completely. Slowly pour the milk mixture into the egg mixture, whisking constantly, to allow the milk to gradually bring up the temperature of the yolks so they don't scramble. Once the mixture is smooth, pour it into the ramekins. Sprinkle on ginger, distributing evenly.</p>
<p>Place baking dish on the middle rack of the oven. Pour enough water in the pan to come ½ to ¾ of the way up the outside of the ramekins. Bake until just set, 40 to 50 minutes. If you lightly jiggle the pan, the pots de crème should all move as one (like Jell-O). You can insert the tip of a stainless steel knife into the center to check that it comes out clean, or take the internal temperature with a thermometer, which should read 180 degrees F.</p>
<p>Serve hot or cold.</p>
