(Hot tip: As you're cleaning them, keep dipping the freshly cut parts into lemon water to slow oxidization and browning.) Then pair their leaves and hearts with everything from a simple butter dip to spicy mayo (our grilled recipe has a pistachio-yogurt cream you’ll love). You could also just use store-bought artichoke hearts, canned or jarred in oil or water. We’ve included a number of antipasto salad recipes that rely on the hearts, including a vegan and chickpea-based one, as well as antipasto-inspired appetizers, like our antipasto bites and picks.
