What is there even to say about celery? It’s one of those ingredients, like onions and carrots, that's a silent building block of so many dishes, so much so that it doesn’t really get its due. We’re here to change that and shine a light on this delightful vegetable. It's great for adding crunch, depth of flavor, and color to everything from stir-fries to salads to comfort food staples. We bet you’ve already got some in your fridge right now, so what are you waiting for? Check out these 25 celery recipes for ideas; we know you’ll (celery) heart them.

Let’s start with some basics. Celery is, of course, great in a variety of salads, adding much needed crunch, texture, and freshness to both mayo- and greens-based options. We’ve included a number here, like our crunch salad, our macaroni salad, our tuna salad, our egg salad, and more. While it’s more obvious in these applications, celery is also super-important in a more hidden capacity in things like soups, stews, and braised meats, usually in the form of a mirepoix or a soffrito.

If you’re unfamiliar, a mirepoix (French) or soffritto (Italian) is a mixture of diced celery, onion, and carrot sautéed in fat (olive oil, butter, etc.) that sweetens and deepens the flavors of a dish. Though the ratios of each ingredient vary from culture to culture, everyone can agree–these veggies are THE thing that takes recipes from good to great. Take our classic Bolognese. Though on the surface, you might not think celery belongs in there, trust us (and hundreds of Italians)—it’s one of the things that makes homemade taste so much better than store-bought.

We think it’s also important to note all the times celery isn’t so much in a recipe as it is a necessary accompaniment to it. We’re of the opinion that classics like Buffalo wings (and related offshoots like Buffalo tempeh “wings” and Buffalo cauliflower) just wouldn't be the same without cooling, crunchy celery. Ditto certain cocktails, like a bloody Mary or a St. Germain spritz—though the celery is technically just a garnish, we know we wouldn’t enjoy them as much without it.

Bloody Mary
