We’re BIG fans of a mash-up here at Delish, so it should come as no surprise that Tex-Mex food is one of our forever go-to cuisines. Tex-Mex—an Americanized hybrid cuisine that pulls inspiration from the American Southwest (including Southern California, Texas, and more) and Mexico—is pretty much all the ingredients we love, spun into myriad recipes, from apps to dinners. Think Taco Bell meets casserole meets an authentic Cinco de Mayo party, and you’re nearly there! We’ve rounded up some of our best recipes here, but trust us when we say—the sky is the limit, and we’ll keep creating these for a long time to come.

When you talk about Tex-Mex, a lot of arguments about authenticity can come up, and we get it. It’s one of those hard to define cuisines! That said, to make sure we’re consistently creating incredible recipes for you to make at home, we’re less concerned with conventions, and more concerned with “does this taste AMAZING?”Luckily, many unquestionably Tex-Mex recipes—like chicken enchiladas, beef taquitos, nachos, and baked “wet” burritos—are inherently incredible, so utilizing them as inspiration to create even more recipes like some of the ones below is a no-brainer.

This Mexican street food staple, a close cousin to the taco (taquito literally means lil’ taco), is made by filling a corn tortilla with seasoned meat, rolling it tightly, and frying until crispity-crunchy.
