When chopped and blanched, it's tender, bite-sized, and has the perfect nooks and crannies for catching all that glorious cheese.

This mac starts the way most do — with a cheese sauce! Ours is pretty classic, starting with a roux of butter and flour. Add in some milk and cheese (we decided on cheddar and mozzarella), and you've got yourself a cheese sauce. Feel free to add whatever spices and hot sauces your heart desires, throw in the cauli, and stir it up. You won't even miss the carbs. Pinky promise.
