Balsamic Cherry Granita

Ingredients
- 1 1/2 lb. sweet cherries, pitted
- 1/2 cup sugar
- 1 Tbsp. orange zest plus 1/3 c. orange juice
- pinch of kosher salt
- 2 Tbsp. balsamic vinegar
Directions
- Step 1Place cherries, sugar, orange zest, and salt in a blender and process until finely chopped, 1 to 2 minutes. Add orange juice and 1 cup water and blend to combine. Let stand 5 minutes. Pour through a fine-mesh strainer set over a bowl, pressing hard on solids to extract as much liquid as possible. Stir in vinegar.
- Step 2Pour mixture into a 2-quart baking dish. Cover and freeze, stirring mixture every 45 minutes with a fork to break up ice, until completely frozen, 3 to 5 hours.
- Step 3Remove from freezer; scrape with a fork until fluffy. Serve immediately.
