Lindsay Lohan circa 1998 was my hero. Say what you want about her now, but Hallie Parker (the edgy 10-year-old poker shark from Napa) and Annie James (the most sophisticated girl at Camp Walden) were so cool. Hallie inspired my (terrible) side bang haircut and blue nail polish obsession; her twin sister made me want to move to London. The two of them opened my eyes to one of the greatest culinary pairings of all time: Peanut butter + Oreos.
A swipe of smooth and creamy Skippy elevates America's favorite sandwich cookie into something transcendent. If you think I'm exaggerating, then clearly you've never tried the combination. This chocolate tower takes the dynamic duo to new heights. It's the twins' favorite snack all grown up.
Instead of trying to track down the fragile chocolate wafers that most icebox cake recipes call for, I used Oreo Thins. This cake is not the place for Double-Stuf or even regular Oreos. The delicate layer of creamy center in the thins is just right. Peanut butter whipped cream is as good as it sounds. It's also no more difficult than making regular whipped cream. You just add a generous scoop of creamy PB. Try not to eat all of it straight from the bowl.
