When it comes to off-the-charts-amazing weekend breakfasts, pancakes get all the glory. They're the first thing many people think of making, largely because they're so easy to make, but that does a colossal disservice to the wonder that is stuffed French toast.
It may seem complicated at first (Dredging! Eggy mixtures! Keeping the filling from oozing out!), but trust us: If you can make a peanut butter and jelly sandwich, and you can flip a pancake, you can conquer stuffed French toast.
Seriously. It starts with creating your filling, like say, Strawberry Cheesecake (diced strawberries, powdered sugar and cream cheese). Mix it up, and slather it on bread like you would buttah:
Don't worry about going all the way to the edges of the bread. That will help keep it from oozing out. Top it with more bread, like you would a normal sandwich, gently pressing down to really stick it together. Keep this up until you've used up the entire loaf—or made as many stuffed French toasts as you want to make (so, again, all of them).
Grab a shallow bowl and beat together five eggs, 1/3 cup of milk, 1/2 teaspoon vanilla extract and a dash of cinnamon. Really whisk it together, breaking up the egg completely.
Now you're ready to fire up the skillet (over medium heat) and dip your first sandwich into the egg mixture, soaking it completely.
Toss on the French toast, giving it a minute or two to turn lightly golden. Take in that magical sizzling sound when the French toast hits the pan.
Once both sides are lightly golden, you're ready to plate that masterpiece. Top it with whatever you'd like (sliced fruit, powdered sugar, a pint of ice cream) and a healthy glug of maple syrup.
The hardest part, of course, will be coming up with the filling that will bring you unspeakable joy. On that note, we have a few suggestions, starting with the aforementioned Strawberry Cheesecake:
