Fact: People love s'mores. In any form. That chocolate, graham cracker and marshmallow combination is like the trinity of dessert: Gooey and decadent, with a little crunch.

One morning, we realized: Pancakes are kind of like graham crackers. What if they sandwiched layers of chocolate and marshmallow, creating the most epic, s'mores-inspired breakfast imaginable? We had to try it.

Start with your favorite pancake recipe—any one will do, even a just-add-water mix—then, once they're fresh off the skillet, slather them with Marshmallow Fluff and melted chocolate, sprinkling each layer with crushed graham crackers. And mini semisweet chocolate chips, if you really want to go buckwild.

Basically, this principle could be applied to anything: Take your favorite pancakes, and layer a stack with any fillings you like: PB&J, cannoli (sweetened ricotta and mini chocolate chips), Elvis (peanut butter, bacon, banana), macerated strawberries and whipped cream. The best part is that you don't have to be an Iron Chef-in-training; you just have be able to flip some pancakes and slather them with your favorite spreads.

 Marshmallow Fluff can be a little hard to spread, but we found heating it up for 5-10 seconds in the microwave, then stirring it, made it a bit easier. Any longer than that, and the marshmallow creme can puff up in the micro, creating the sort of Stay Puft Man explosion that only the Ghostbusters should have to deal with.

With a stack as intense as this, you may want to make a tower and serve it by the slice, along with some Greek yogurt, fresh fruit or some other, lighter side. 

Or just go all out, because it may be hard to share after having a bite.
