I'm a pesto NUT. I love it in all shades, with all types of greens and nuts. I spike it with jalapeño for some heat. I toss in kale when I want to feel, you know, healthy. And now, to make my grossly pale winter skin more attractive, I add avocado.
Avocado fiends will appreciate this for yet another way to sneak avocados into their diets–not to mention a way of joining two incredible foods: avocado and pasta. If avocado and pasta don't sound like the beautiful match they really are, it's time to believe. The creamy texture amplifies the pesto with even more richness—and nutrients. Avocados are so damn good for you. They're full of healthy fats, protein, and super-hydrating antioxidants that your skin loves, including vitamins A and E.
Beyond the avocado, the pesto is pretty traditional: olive oil, fresh basil, pine nuts (toast them if you have time), Parm, and salt. Any type of pasta works; we used linguine, which is highly recommended.
