Chicken chili, Philly Cream Cheese, and jalapeño poppers, staples of game-day snacking, team up to make each other shine in this combo dish. Tomatillos lend a tangy base, while white beans give the stew heft. To bring the whole thing together, we stir in Philadelphia Original Cream Cheese to make everything nice and creamy. As the cream cheese melts, the chili thickens to the perfect consistency for a cozy night with a warm bowl loaded with all the toppings.

Ingredients

boneless, skinless chicken breasts, cut into chunks

large white onion, chopped

cloves garlic, minced

ancho-chile powder
- 2 tsp.
smoked paprika
- 1 Tbsp.
dried oregano
- 2 tsp.
ground cumin
- 2 tsp.
kosher salt

tomatillos, chopped (about 1 c.)
- 1
(14-oz.) can white cannellini beans, drained and rinsed
- 1/3 cup
finely chopped cilantro leaves and stems
- 1 cup
chicken broth
- 12 oz.
(1 1/2 bricks) Philadelphia Original Cream Cheese, room temperature, cut into chunks
- 3/4 cup
fresh or frozen corn kernels
- 1
small red onion, finely chopped
- 4
slices cooked thick-cut bacon, chopped
- 1
avocado, diced
Directions
- Step 1Heat olive oil in a large Dutch oven over high heat. Add chicken and cook, stirring occasionally, until browned, about 6 minutes.
- Step 2Add the onion and minced jalapeños and cook for 4 minutes, until onion is translucent.
- Step 3Add the garlic, spices, salt, tomatillos, tomatoes, beans, and cilantro and cook for 3 minutes more.
- Step 4Add the broth and continue cooking until the liquid bubbles. Add the cream cheese and stir until creamy.
- Step 5Cover, reduce heat to low, and simmer for 15 minutes. Add the corn and continue to cook until it’s bright yellow.
- Step 6Serve, garnished with red onion, jalapeño slices, bacon, and avocado.
