I've been gorging on so much watermelon (and downing so many of these spiked melon slushies) that I'm almost sick of it. Almost—but not yet. To move away from the same ways I tend to eat the melon (cubed and sprinkled with sea salt—try this immediately if you haven't already; salt brings out the fruit's sweetness), I've been exploring the melon's savory side. I've put watermelon into a caprese in place of tomatoes, and I'll occasionally crumble some feta on top of it, but I've never really ventured farther. Turns out, it's a delicious path to go down!
WATERMELON PIZZA
OK, OK, not a real pizza, obvs, but anything is better in pizza form, you know that (especially this fruit pizza). This is essentially a deconstructed watermelon and feta salad. Slice the biggest round of watermelon you can, top with crumbled feta, red onion slices, torn basil, and balsamic. Slice into pizza-like triangles. Instagram a picture.
PROSCIUTTO-WRAPPED WATERMELON
You've seen how Italians do this with cantaloupe; now do it with watermelon.
WATERMELON SALSA
We're not newbies to the fruit salsa game (we made this delish strawberry one), but a watermelon one is pretty revelatory. Combine diced watermelon, cucumber, red onion, cilantro, jalapeño, garlic, lime juice, and salt in a bowl and serve with chips.
ARUGULA SALAD WITH WATERMELON AND BLUE CHEESE
Fact: Blue cheese and watermelon are a surprisingly delish match. (If you hate blue cheese, leave.) Toss arugula with olive oil, chopped watermelon, crumbled blue cheese, and thinly sliced red chiles. Season with salt and pepper.
SPICY WATERMELON WITH FETA
Sweet watermelon mellows the heat of red pepper flakes for winner of easiest summer side ever. Drizzle watermelon slices with olive oil, sprinkle with red pepper flakes, and top with crumbled feta.
