The only thing better than an ooey gooey campfire s'more is an ooey gooey s'more-inspired dessert—complete with crunchy graham crackers, rich chocolate, and toasted marshmallow. And I mean HEAVY on that toasted marshmallow. The only way a s'more should be, right?
My husband and I love roasting s'mores when we go camping, so this dessert was a no-brainer. While it might look a little complicated, it's not. What you see here is a traditional graham cracker crust. Inside the crust is a smooth chocolate ganache made from just three ingredients: semi-sweet chocolate, cream, and butter. (Please leave your diet at the kitchen door.) On top is a whipped marshmallow topping that, thanks to my kitchen torch, tastes identical to toasted marshmallow. S'mores bliss I tell ya!
All of this indulgence is served in small 3" round tartlet pans. If you have 4" tartlet pans, just use those. Instead of making tartlets, you can also prepare one giant s'mores tart in a traditional 9" round pan. Just beware that the ganache's chilling time will increase to a minimum of 3 hours.
