Is there a more dramatic-looking piece of produce than the pineapple? With its green spiky top and yellow-dimpled sides, it's truly a shame that we typically use only the juicy inside and toss the inedible parts. To give the tropical its proper due, we've fashioned it as a serving bowl three different ways: as a bowl for ice cream (rainbow sherbet, in fact), a raspberry-strawberry smoothie, and the most delicious fruit mousse you'll ever taste.

To make a pineapple bowl, find the ripest pineapple you can (it's much easier to scoop out the fruit) and halve it lengthwise, leaving the stem intact on one half. Using a knife, score the pineapple as if you're dicing it, then scoop out the fruit with a large spoon. Save for later use.

A for-sure way to enjoy that bowl of ice cream even more? Put it in a pineapple. Scoop rainbow sherbet into pineapple bowl and grab a spoon. For a fancier version, serve vanilla ice cream topped with toasted coconut.

Whether you need an easy dessert or a simple snack, this raspberry mousse is heavenly—and better yet, it's only two ingredients: whipped topping (Cool-Whip, truwhip, whichever brand you prefer) and raspberry yogurt. In a bowl, mix together 8 oz. whipped topping and 6 oz. raspberry yogurt. Top with raspberries.
