This frosting-free method for topping cupcakes is perfect if:
a) You feel like cupcakes but don't want to make frosting.
b) You make cupcakes only to realize while they're baking that you don't have a tub of frosting, but you do have a bag of marshmallows.
c) You can't get enough s'mores in your life.
d) You're lazy like me.
e) All of the above.
This trick couldn't be easier:
One minute before your cupcakes are done baking, pull them out and top each with a jumbo marshmallow. (If it feels unwieldy, place the marshmallow on its side.)
Broil—watching closely!—until golden, slightly charred, and very soft, 1 to 2 minutes.
Use the back of a spoon to recenter and spread marshmallows, if necessary.
