
Caramelized Onion, Garlic, And Blue Cheese Flatbread

With the help of pre-made pizza dough, this flavorful flatbread comes together in less than an hour. Piled with sweet caramelized onions, a generous sprinkling of Treasure Cave® Crumbled Blue Cheese, and a bit of peppery arugula for freshness, it’s a colorful and satisfying dinner easy enough for weeknights and impressive enough to serve at a weekend dinner party.

Ingredients
- 3 Tbsp.
unsalted butter
- 2
large red onions, halved and thinly sliced
Kosher salt
- 3
garlic cloves, minced
- 1/2 tsp.
chopped fresh thyme leaves
- 1/2 lb.
pizza dough, room temperature
- 1/2 cup
dry white wine, such as sauvignon blanc
All purpose flour, for dusting
- 3/4 cup
- 2 Tbsp.
lightly toasted pine nuts
- 1/2
packed baby arugula
Directions
- Step 1In a large skillet, melt butter over medium heat. Add the onions and ¼ teaspoon salt and cook, stirring occasionally, until they are golden, about 30 minutes. Add garlic and thyme, and cook, stirring, until fragrant and light golden, about 1 minute more. Pour in wine and cook, stirring, until wine is almost completely evaporated, about 2 minutes more. Remove from the heat.
- Step 2Preheat oven to 425°. Lightly dust a large piece of parchment paper with flour and stretch or roll pizza dough to a rounded rectangle about 14" by 10". Slide parchment and dough onto a baking sheet.
- Step 3Top flatbread with caramelized onion mixture, leaving about a ½-inch border. Bake until flatbread is crisp on the bottom and golden, 20 to 25 minutes. Brush crust with olive oil. Remove from oven and sprinkle with arugula, Treasure Cave® Crumbled Blue Cheese, and pine nuts. Slice, and serve.
