We know better than to turn our noses up at trying out a TikTok food trend. Some standout favorites of ours are when we had a blast testing out the tortilla wrap hack; the ramen hack that taught us that truly, everything IS better with everything bagel seasoning; when we learned to scrunch phyllo to make crinkle dessert; and the baked feta pasta that has permanently entered our weeknight dinner rotation.
Pesto eggs are next on the list, and we kind of love how perfect they are in their simplicity. Why didn’t we ever think to swap out our cooking oil of choice for pesto before? It makes SO much sense—once heated, the basil, pine nuts, and parm in pesto fry up crispy and nutty, deepening their earthy flavors. Combine that with the perfection of an egg in a hole, and you’ve got yourself a special, next-level breakfast that comes together fast. TBH, we’re probably going to start using pesto to cook all of our eggs from now on. Mmm, can you imagine scrambled eggs cooked in pesto? Yes, please!
TikTok trends come and go, but pesto is forever, especially when you can make it from more than just basil. Try swapping in different greens, like in our carrot top pesto, or different vegetables altogether, like in our red pepper pesto pasta or our asparagus pesto pasta, for twists that’ll keep your meals feeling extra fresh. You could even swap our traditional pine nuts for your nut of choice—walnuts or almonds are wallet-friendlier, and just as nutty and delicious.

Ingredients

slice bread, such as ciabatta or sourdough
- 1 Tbsp.
pesto, store-bought or homemade
- 1
large egg
Kosher salt
Freshly ground black pepper
Directions
- Step 1Using a cup or paring knife, cut an egg-sized hole in the center of your bread.
- Step 2In a small nonstick pan, heat pesto until lightly sizzling. Add bread and bread cut-out, then crack egg into the hole in the bread.
- Step 3Cook for 3 minutes, flip, and cook 1 minute more for an over-easy egg. Transfer to a plate and season with salt and pepper.
