Green beans are one of the most versatile and delicious summer veggies. There's so many ways to prepare them, and even more ways to serve them. (With feta! With toasted nuts! Squeezed with lemon!)
When it comes to prep, there's not much to it. Simply rinse your beans and snap off the stems with your fingers, or trim them off with a paring knife.
Now that you've got your beans prepped, it's time to choose your cooking method. Feeling lazy? Throw them on a sheet tray and roast them. Want them fast? Sautée them in a pan with some minced garlic! Trying to be healthy? Try steaming them, and serving with with a squeeze of lemon and some red pepper flakes. Weather nice? Get those babies on the grill! Like most veggies, they taste great with a little char.

Ingredients
- 1 lb.
green beans, trimmed
- 1 Tbsp.
extra virgin olive oil
Kosher salt
Freshly ground black pepper
- 2
garlic cloves, minced (optional)
juice of 1/2 lemon (optional)
Directions
ROASTED GREEN BEANS
- Step 1Preheat oven to 425°. Toss green beans with olive oil and season with salt and pepper. Spread beans into an even layer on a large baking sheet and roast until golden and tender, 12 to 15 minutes.
SAUTEED GREEN BEANS
- Step 1In a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Add green beans and season with salt and pepper. If using, squeeze lemon over beans. Cook, stirring occasionally, until beans are tender, 6 to 8 minutes.
BLANCHED GREEN BEANS
- Step 1Bring a large pot of salted water to a boil. Meanwhile, prep an ice bath by filling a large bowl with ice and water. Boil green beans for 6 to 7 minutes, until tender. Transfer beans immediately to ice bath with a slotted spoon to stop cooking.
- Step 2Drain beans and transfer to serving dish. Season with salt and pepper and serve.
GRILLED GREEN BEANS
- Step 1Preheat a large grill pan over medium-high heat or a grill pan to high. In a large bowl, toss green beans with olive oil and garlic and season with salt and pepper.
- Step 2Place green beans on grill pan and cook until charred all over, about 7 minutes total. (If you’re using a grill, lay a thick piece of foil over grates and place green beans on top. Grill as instructed.)
