NOTE: Porchetta is available at Italian markets and in the deli section of some grocery stores. Herb-roasted pork may be used as a substitute if porchetta is not widely available in your area. To make your own Dijonaisse, simply combine equal parts mayonnaise and Dijon or whole-grain mustard.
Porchetta & Provolone Sandwich

Ingredients
Extra-virgin olive oil
- 1
small bunch broccoli rabe (6 oz.), cut into bite-size pieces
- 1/2 tsp.
kosher salt
- 1/4 tsp.
freshly ground black pepper
- 8 oz.
thinly sliced porchetta, cut into 2-inch-wide strips
Pinch of red-pepper flakes (optional)
- 2 Tbsp.
Dijonnaise
- 1
demi-baguette or hoagie roll, split in half lengthwise
- 2 Tbsp.
onion jam or pepper jelly (optional)
- 4 oz.
Directions
- Step 1Preheat broiler with a rack in upper-third position. Heat a generous amount of oil in a medium skillet over medium-high. Add the broccoli rabe; season with the salt and pepper and cook, stirring occasionally, until crisp-tender and beginning to brown in places, 3 to 4 minutes. Stir in the porchetta and pepper flakes, if using, and continue cooking just until the porchetta is hot, about 1 minute. Remove from heat and cover to keep warm.
- Step 2Spread the Dijonaisse evenly over one cut side of the baguette. Spread the jam evenly over the other cut side, if using; transfer to a baking sheet. Sprinkle ½ cup of the BelGioioso Mild Provolone evenly over the jam and Dijonaisse. Broil until the cheese is melted and bubbly and the edges of the baguette begin to crisp and brown, 3 to 4 minutes.
- Step 3Top the baguette evenly with the broccoli rabe-porchetta mixture and sprinkle with the remaining ½ cup provolone. Return to the broiler just until the cheese melts, 1 to 2 minutes more. Press the sandwich together, halve crosswise, and serve immediately.
