It's all too easy for brunch to become repetitive. I mean, don’t get me wrong, it’s tradition to have my eggs Benedict with a Bloody Mary, and I respect that, but there comes a point where you know you can grow and get out of your comfort zone. These stuffed bagel bites seem like the perfect solution to me. These bites are miniature bagels stuffed with cream cheese😉 and your favorite bagel toppings, so all of your guests can have a taste of their favorite breakfast order. The best thing of all? You can make them the day before, so you only have to finish the last few steps right before people arrive. I can tell you there is nothing more homey and luxurious than giving someone a freshly baked good; it may be semi-homemade, but nobody has to know. Here are a few tips to bite your way to success.
The cream cheese:
Trying to close the dough around cream cheese that’s room temperature isn't gonna work. Make sure you have the cream cheese portioned out into 2-tsp. pieces and in the fridge to get cold. This will make it quicker for you to stuff them, and your kitchen counter will look cleaner while you work (I always want you to look your best in the kitchen!).
Don't skip the boiling:
The boiling in baking soda and salt water is what gives these balls the texture of a bagel. Without this step they won't have that chewy center and crust. Remember it’s just for 10 to 15 seconds, so don’t turn away while you’re doing this.
Storage:
These fun bites can be made 3 days ahead. Store in an airtight container at room temperature.

Ingredients
All-purpose flour, for dusting
- 1 lb.
store-bought or homemade pizza dough, room temperature
- 1
(8-oz.) pkg. cream cheese, cold
Cooking spray
- 3 Tbsp.
light or dark brown sugar
- 1 tsp.
baking soda
Kosher salt
- 1
large egg
White sesame seeds or other bagel topping, for serving
Directions
- Step 1Line a baking sheet with parchment, then lightly dust parchment with flour. Using a bench scraper, divide dough into 20 pieces (about 20 g. each). Roll each piece into a ball and make an indentation with your thumb. Spoon about 2 tsp. cream cheese into the center of each piece.
- Step 2Place dough in one hand. Using your other hand, pinch all sides together to seal cream cheese, ensuring it’s tightly closed. Arrange balls seam side down on prepared sheet. Lightly spray dough balls with cooking spray, cover with plastic wrap, and let rise in a warm area until doubled in size, about 30 minutes.
- Step 3Arrange a rack in center of oven; preheat to 450°. Fill a medium pot with water, stir in brown sugar and baking soda, and bring to a boil.
- Step 4Working in batches, cook bites, turning halfway through, until just golden brown, about 15 seconds. Transfer to a fresh parchment-lined baking sheet.
- Step 5In a small bowl, beat egg until blended and brush over each bite. Sprinkle with sesame seeds.
- Step 6Bake bagel bites until deep golden brown, about 20 minutes.
