In the oven, the heat will caramelize the honey and butter in the glaze, transforming plain, boring carrots into an irresistible side dish to complete any holiday dinner. How To Make Honey-Glazed Carrots
INGREDIENTS
- Butter & Honey: Our sticky-sweet glaze comes together from melting butter and honey together in a saucepan. I add some seasonings and herbs in to add even more flavor, but just the butter and honey is delicious as well.
- Rosemary & Garlic Powder: I love the combo of savory garlic powder and dried rosemary, but feel free to experiment! Swap out the garlic powder for minced garlic if you prefer, try dried oregano or parsley, or add in some ginger or cinnamon to play up the carrots' natural sweetness.
- Carrots: Pretty much any kind will work in this recipe: whole, baby carrots, orange, or rainbow-colored. You’ll just want to make sure that your carrots are all roughly the same size and shape so they cook evenly in the oven, so make sure you're not only peeling them, but cutting them as uniformly as possible. If you're using smaller carrots, keep an eye on them in the oven—they may be done earlier.
STEP-BY-STEP INSTRUCTIONS
First, preheat your oven to 400º. While that’s preheating, we’ll make our honey-butter glaze. In a saucepan over low heat, melt your butter. Then, stir in the honey, rosemary, and garlic powder before seasoning with salt and pepper. Once it comes together, set aside while we prep our carrots.
Peel and cut your carrots in half, then place them on a large baking sheet. Pour the glaze over the carrots, using the tongs to fully coat each and every one.
Add to the oven, then roast until they are caramelized and glazed—this should take around 35 to 40 minutes. Garnish with some fresh thyme if you desire, then serve.

How To Serve With Honey-Glazed Carrots
Besides being delicious, the best thing about these glazed carrots is that they’re incredibly versatile. In addition to your centerpiece of spiral ham, lamb shanks or roast beef at your holiday dinner, try serving them alongside a delicious skillet of lemon-herb chicken and potatoes, or comforting butternut squash mac ‘n’ cheese.
Storage
If you have leftovers, you can store them in an airtight container in the refrigerator for up to 3 days. To reheat, I recommend microwaving in a covered container at 30-second intervals. You may want to add a teaspoon of water to the container before heating, just to add some additional moisture that will prevent the glaze from getting too sticky while it’s being reheated.
