Three-cheese, please! This ultra-creamy, cheesy spaghetti is as simple and comforting as you can get; only a few basic ingredients and 20 minutes are needed for the ultimate weeknight pasta dinner. I’ve made this simple recipe even simpler by calling for a pre-shredded Italian cheese blend instead of going through the trouble of buying three separate cheeses and shredding them yourself. The three cheeses combine with heavy cream, chicken broth, garlic, and a sprinkling of even more cheese (!!) for a rich weeknight dinner that will give classic spaghetti & meatballs a run for its money.
This dish is fairly close to a chicken spaghetti, so it would work well with the addition of chicken if you really wanted to pack in the extra protein. The base of this pasta is spaghetti, which is the perfect noodle for this cheesy sauce, but really any other long pasta shape—like fettuccine, linguine, or angel hair—would work.
If you have any leftovers, pop them into an airtight container and place them in the fridge for up to 3 to 5 days.

Ingredients
- 12 oz.
spaghetti
- 1 Tbsp.
extra-virgin olive oil
- 3
garlic cloves, minced
- 3/4 cup
heavy cream
- 3/4 cup
low-sodium chicken broth
- 1 1/4 cups
shredded Italian three-cheese blend
Kosher salt
Freshly ground black pepper
- 2 Tbsp.
thinly sliced chives
Finely grated Parmesan and finely chopped fresh parsley, for serving
Directions
- Step 1In a large pot of boiling salted water, cook spaghetti, stirring occasionally, until al dente according to package directions. Reserve 1 cup pasta water, then drain.
- Step 2Meanwhile, in a large skillet over medium heat, heat oil. Add garlic and cook, stirring, until fragrant, about 1 minute. Add cream, broth, and a few splashes of reserved pasta water. Add cooked spaghetti and toss until noodles are fully coated and liquid is simmering.
- Step 3Remove from heat and stir in cheese. Toss constantly, adding more pasta water if needed, until sauce reaches desired consistency; season with salt and pepper. Top with chives and more Parmesan and parsley.
