Spice Poke Cake with Mocha Frosting

Ingredients
For the cake
Cooking spray
- 1
(15.25-oz.) box yellow cake mix, plus ingredients called for on box
- 2 1/2 tsp.
ground cinnamon
- 1 1/2 tsp.
ground ginger
- 1/2 tsp.
ground nutmeg
- 1/2 tsp.
ground allspice
- 1/4 tsp.
ground cloves
- 2 cups
marshmallow creme
- 2 Tbsp.
water
For the frosting
- 1 cup
butter, softened
- 2 1/2 cups
powdered sugar
- 3/4 cup
cocoa powder
Pinch kosher salt
- 1/4 cup
brewed Cafe Bustelo® Espresso, room temperature
Dark chocolate shavings, for garnish
Directions
- Step 1Preheat oven to 350º and grease a 9"-x-13” baking pan with cooking spray. Prepare yellow cake mix according to package directions and whisk in spices. Pour into prepared pan and bake until a toothpick inserted in center comes out clean, 27 minutes. Let cool completely.
- Step 2Poke cake all over with bottom of a wooden spoon. In a small bowl, microwave marshmallow crème and water until melted, then stir until smooth. Pour mixture over cake, making sure to get into the poke holes.
- Step 3Make frosting: In a large bowl using a hand mixer, beat butter, powdered sugar, cocoa powder, and salt until smooth. Beat in espresso. Spread frosting all over cake, top with shavings then slice, and serve.
