When it comes to classic fall desserts, you can't get much more iconic than apple pie. But, if you're looking for a shareable treat (or simply don't want to mess with making an entire pie), it's not the most convenient dessert. Enter: Apple pie bars. With a no-fuss crust that you press (not roll), they're much easier than baking an entire pie. Plus, with the jammy spiced filling and the delicious homemade crumble topping, you might just prefer it over the classic pie. That type of apple you use is completely up to you! We love these bars baked with Honeycrisp or Granny Smith apples, but feel free to use your favorite baking apple, or combine the two to mix it up.
Serving ideas.
While the crumb topping is delicious all on its own, adding an extra little something never hurts. Drizzle these bars with some extra caramel for an extra-sweet topping, or serve with a scoop of homemade ice cream to really take these bars over the top.
Storage and freezing.
Place any leftovers in an airtight container in the fridge for around 3-4 days. One of our favorite things about these bars is that they're equally delicious warm, room temp., or even cold! When you're ready to use up those leftovers, take out of the fridge and enjoy at your desired temperature. If you prefer, you can also freeze these apple pie bars. Simply store wrapped in an airtight container in the freezer for up to 3 months.

Ingredients
For the crust
Cooking spray
- 1 cup
(2 sticks) butter, softened
- 1/2 cup
granulated sugar
- 1/4 cup
packed brown sugar
- 2 1/2 cups
all-purpose flour
- 1/2 tsp.
kosher salt
For the filling
- 6
apples, peeled, cored, and sliced
Juice of 1/2 lemon
- 1/2 cup
packed brown sugar
- 1 tsp.
ground cinnamon
- 1 tsp.
pure vanilla extract
- 1/2 tsp.
kosher salt
For the topping
- 1 1/2 cups
all-purpose flour
- 1 cup
chopped pecans
- 1 cup
packed brown sugar
- 1/2 tsp.
kosher salt
- 3/4 cup
(1 1/2 sticks) butter, melted
Caramel, for serving
Directions
- Step 1Preheat oven to 350° and line a 9”-x-13” pan with parchment then grease with cooking spray. In a large bowl using a hand mixer, beat butter and sugars together until light and fluffy. Add flour and salt and mix until just combined.
- Step 2Press into prepared pan about 1/2” up sides. Bake until lightly golden, 20 minutes.
- Step 3In a large bowl, toss apples, lemon juice, brown sugar, cinnamon, vanilla, and salt together. Spread apples over crust.
- Step 4 In a medium bowl, whisk together flour, pecans, brown sugar, and salt. Stir in melted butter until coarse clumps form.
- Step 5Sprinkle crumb topping over apples and bake until top is golden and apples are soft, about 1 hour.
- Step 6 Let cool at least 15 minutes then slice into squares and drizzle with caramel before serving.
