Yes, we know, this is crazy decadent. We suggest sharing it with a bacon-loving friend. (And may we suggest a slice of bacon-weave apple pie for dessert?)

Ingredients

slices bacon
- 1/4 cup
shredded cheddar
- 1/4 cup
shredded Monterey jack
- 1/4 cup
shredded cooked chicken
- 1
roma tomato, diced
- 1/2
avocado, thinly sliced
Sour cream, for serving
Directions
- Step 1Preheat oven to 400°. Line a large baking sheet pan with parchment paper. To form a bacon weave, line four bacon slices side-by-side on the baking sheet. Lift up and fold back every other bacon slice, then lay a fifth slice on top in the center.
- Step 2Lay folded-back slices on top of fifth slice, then fold back the alternate slices. Place sixth slice on top, next to the fifth slice, weaving like you did before. Repeat this process two more times to complete the weave. Repeat this whole process one more time, so that you have two 4 slice by 4 slice bacon weaves.
- Step 3Place an inverted, oven-proof cooling rack on top of bacon slices to help them stay flat. Bake 30 minutes, or until bacon starts to crisp.
- Step 4Let bacon cool slightly, then trim edges to make them round. Onto one round, add cheese, shredded chicken, tomatoes, and avocado. Top with second bacon weave round.
- Step 5Heat a large skillet over medium heat. Add bacon weave and cook until cheese is melty, about 3 minutes per side. Remove from heat, cut into quarters, and serve with sour cream on the side for dipping.
